Trout, Pesto, and Wine--Oh My!

I made a triple batch of pesto around Christmas. 2 batches were given as a gift, but I had to keep some for myself. After using some for a basic pasta dish, I still had a few tablespoons leftover...a perfect topping for the trout I found on sale! This was quite a tasty and easy little feast, with sauteed chard and a Middle East whole grain blend as side dishes.

For the trout: Preheat oven to 375. Rinse 12 ozs trout fillet, and pat dry. Spray with olive oil, and top with 3 tbsp. pesto--my pesto recipe can be found here. Place in shallow baking dish, and cook in oven for about 15 minutes. Don't overcook the fish!

For the chard: Mince 3 cloves garlic. Coursely chop 1 bunch red swiss chard (after first removing the thick stems and ribs). Sautee the garlic in 2 tbsp olive oil in a large pan. Add the chard and a tsp of soy sauce, cover and cook on medium heat until wilted, about 3-5 minutes. Top with some toasted nuts.

Wine Pairing: I'd purchased a bottle of 2006 Foris Pinot Blanc for dinner at the home of a seafood lover; alas the dinner was cancelled due to a storm and we were left with this bottle of wine. Well, we made the best of the situation by serving it with this trout dish, and it was a great match. This Oregon pinot blanc has a light floral quality and a very delicate taste, and complemented the flavors of this dish very well.

This sounds lovely and I think I'll try it out. I'd like to see the recipe for the whole grain side dish as well. But all in all, it sounds like a scrumptious meal!

The grain dish was simply a box of prepared Middle Eastern whole grains, one of those with the little spice packets. While I like to cook as much as possible from scratch, not opposed to supplementing a meal with something like that. (I am typically cooking with a toddler running about!)

Are you going to have an OTBN on Feb. 23rd. The wine reviewers for the Wall Street Journal invented or defined Open That Bottle Night for the last Saturday in February. Everyone probably has a bottle of wine that is special to them to have on a special occasion. But that special time never seems to come. So, the last Saturday is the night to open that special bottle. Have a dinner party and have guests bring their Special bottle and have them tell the story on that bottle.

Wow, that recipe sounds great! i love fresh trout. My husband fishes and there is nothing better when he brings me some fresh trout and redfish (and flounder on occasions!)
